Before you disagree and carry a placard with jollof rice written on it, let’s briefly explain our choice of fried rice.  

Fried rice is usually prepared with more veggies and other stuff to chew, making it a lot tastier than jollof rice. It also goes better with salad and coleslaw than jollof rice. However, if your jollof rice is more delicious than fried rice, blame the cook! 

Based on our experience of attending and eating both dishes at events like birthday parties, burial ceremonies, and book presentations, we discovered only a few people know how to cook fried rice.

How to prepare fried rice

Add rice in a bowl in about two inches of warm water. Then, for 30 seconds, wash the rice with your hands until the water turns cloudy. Drain the rice with a sieve. Repeat this rinsing and draining process until the rice is free of the cloudy substance. Then transfer the drained rice into a bowl.

Add half of the two cups of chicken stock to a small pot and boil on fire. Stir the stock in the drained rice and return to boil, but this time at a reduced heat. Cook for about 10 minutes until stock is absorbed and rice is half cooked. Then transfer the rice to a baking sheet and spread it into an even layer. Let it cool for 15 minutes.

In a frying pan, bleach oil over medium heat until glistening. Then add green beans, carrots, onion, and salt to taste and cook for about two minutes, until vegetables are coated in oil and polished.

Three cups of parboiled rice
Vegetable Oil
Chicken (whole chicken or drumsticks)
100g cow liver
One tablespoon of Nigerian curry powder (not to be mistaken for Indian curry)
Half a cup of green beans
Three carrots
Three onions
Three stock cubes
One tablespoon of thyme
Salt (to taste)

Cut the vegetables

Wash the vegetables you intend to use in cooking the fried rice. Scruff and cut the carrots into chunks. Slice the green beans into small pieces. Then soak the two separately in hot water for about six minutes and drain. Chop one bulb of the onion. Set everything aside.

Prepare the liver and chicken

Cook the cow liver and cut it into tiny pieces when it’s ready.
Cut the chicken into pieces and cook with cubes, thyme, and two chopped onions when it’s ready, deep fry it with vegetable oil.
To save time and energy, you can cook the liver with the chicken together.

How to make fried rice step by step

Parboil the rice and rinse it with cold water. Put in a sieve, so all the water drains out.

Pour the chicken stock into a sieve. This is done so that all traces of onions, thyme, and other seasonings used in cooking the chicken are removed. Then put it into a pot and set it to boil.

Once the water boils, add the parboiled rice. Then add one tablespoon of plain yellow curry powder and add salt to taste. Ensure the water level is slightly less than the level of the rice or, at most, at the same level as the rice.
This is very important so that all the water dries up by the time the rice is cooked. Otherwise, the rice will be overcooked. Stir the contents and cover the pot. Leave to cook on medium heat. Once the water has dried up, the rice should be cooked. The best fried rice is one in which the grains are not mashed.

Transfer the rice to another pot to help it go cold. This helps to keep the grains from sticking together because if the rice is left in the original hot pot, it will continue to cook and eventually stick together.

Since the rice will be fried in batches, you need to divide the vegetables into four or five equal parts. Also, dice the cow liver into the same number of parts.

Pour a small amount of vegetable oil into a frying pan. Let the quantity of oil be such that it would be absorbed by one part of the cooked rice and one part each of the vegetables.
Once the oil is hot, add one part of the diced onions and stir for a few seconds, followed by one part of the diced cow liver, one part each of the diced vegetables, and then one part of the cooked rice. Add salt to taste.

If you need to touch up the colour, add more curry at this stage. Then stir till all the ingredients have mixed well. Transfer to a dry pot. Repeat this for the remaining batches of the ingredients and cooked rice.
The fried rice is ready. Serve with fried chicken, coleslaw or Nigerian salad, and Moi Moi.

If your tongue can withstand it and you like some heat, adding a dash of cayenne pepper is okay.

Don’t over-boil your rice before frying it, except, of course. You have Tuwon Skinkafa fried rice in mind!

Try not to overcook your veggies too. Fried rice is best enjoyed when the vegetables are still crispy.
