Ingredients for Homemade Ice Cream Recipe

  • 2/3 c. sugar
  • 6 egg yolks
  • 1 ½ c. heavy cream
  • 1 ½  c. whole milk
  • 2 tsp. pure vanilla extract
  • ½  tsp. salt

Instructions for a Homemade Ice Cream Recipe

  • The night before you plan on making your ice cream, place the ice cream maker bowl in the freezer to chill. Since your ice cream base will also need to chill, we suggest making it the night before too.
  • Make your ice cream base: In a large bowl, whisk together sugar and egg yolks until lightened in colour and slightly thickened, 3 to 4 minutes. Whisk in heavy cream and whole milk until no traces of yolk remain.
  • Pour mixture into a medium saucepan over medium-low heat. Slowly heat through for 15 to 20 minutes until the mixture thickens slightly. Stir frequently with a wooden spoon, ensuring the mixture never becomes a simmer.
  • To check if the mixture is done, coat the back of your wooden spoon with the mixture and swipe your finger through the mixture. If your finger leaves a clean line, your mixture is good to go this will be at around 170° if you’re using a candy thermometer.
  • When the custard is adequately thickened, stir in vanilla and salt. Strain into a large bowl, cover and chill for 3 hours, up to overnight.
  • When your custard is chilled, and your ice cream maker bowl is frozen, churn ice cream according to the manufacturer’s instructions. When ice cream is soft, serve consistently, transfer it to another container, and freeze until hardened for 2 to 3 hours or overnight.

Mixing Instructions for Chocolate Homemade Ice Cream

  • Heat the Chocolate Mixture: In a saucepan over medium heat, combine the milk, cocoa powder, salt, and half the sugar. Stir the mixture constantly as you bring it just to a simmer. Remove from heat.
  • Temper the Egg Mixture: In a small bowl, whisk together the egg yolks and sugar just until combined. You need to temper the eggs so they don’t cook. Tempering is just bringing the egg mixture up to a higher heat in a slow way so the egg doesn’t cook from flash heat. It will be easier to temper the eggs if you allow them to come to room temperature before you start. Slowly stir 1/2 cup of the chocolate mixture in a drizzle into the egg mixture. If you do this slowly enough, the eggs won’t begin to resemble scrambled eggs.
  • Combine the Mixtures and Thicken: Pour that egg mixture back into the saucepan with the chocolate mixture. Heat over medium heat until thickened, about 3-5 minutes. Do not boil the mixture. If the mixture gets too hot and boils, you could end up with scrambled eggs. Remove the pot from the heat and add half of the chopped chocolate, stirring until the chocolate is melted.
  • Chill the Mixture: Pour the mixture into a heat-proof bowl. To avoid putting the hot mixture in the refrigerator, chill the bowl over another bowl filled with ice for 10-15 minutes to cool it down first. Just get a second bowl that’s a similar size or larger than the one your mixture is in. Fill it with ice and set the bowl with the custard over it. When it’s cooled down, refrigerate it for about two hours until it’s cold.
  • Churn the Ice Cream: After the chocolate mixture has completely cooled, stir in the cream and vanilla. Pour the mixture into your ice cream maker, and churn according to the manufacturer’s directions. After 2-3 minutes, add the remaining chopped chocolate so it can blend into the ice cream.
